Red Wine and Thyme Sauce


Serves 4

Ingredients

1 cup red wine
3 shallots (finely chopped)
1 teaspoon dried thyme
1 cup beef stock
1 tablespoon brandy
1 tablespoon lemon juice
1 tablespoon finely chopped fresh parsley
1 tablespoon cornflour

Method

1 Place the whine, shallots and thyme in a saucepan over medium heat. Bring to the boil, reduce heat and simmer until liquid reduces to 1/3 cup.
2. Add the beef stock, brandy, lemon juice and parsley. Mix a little of this liquid into the cornflour and stir well to combine. Bring to the boil, reduce heat and simmer until thickened.
3. Serve with steak or lamb chops.
