Barbecued Steak

Serves 4

Ingredients

4 t-bone or sirloin steaks 2 tablespoons oil salt and pepper to taste

Method

1. Cut away any fat to prevent flare-up while cooking. Brush steak with oil and season to taste with salt and pepper. 2. Set a gas or electric barbecue to high. If using charcoal or wood, build a good fire, and then let it die down until the coals turn white.
3. For a perfect barbecue steak, the meat needs to be sealed well to retain its juiciness. Seal steak on one side over high heat for 2-3 minutes or until juices appear on the uncooked side. Turn over and seal the other side for 2-3 minutes. If you like your steak rare, remove immediately. If you like your steak medium, move meat to a cooler part of the barbecue and continue cooking for a further 2-3 minutes each side. For well done, cook for a further 4-6 minutes each side after sealing.
4. Test if steak is done by pressing with tongs. Rare is soft to touch, medium has a little resistance and well done feels firm. Don't cut into steak to see if it is cooked because you will lose tasty juices.
